Ingredients
- 1 and 1/2 tablespoons butter
- 4 cloves of garlic, grated
- 2 cups light cream
- 1 cup fresh grated Parmesan cheese
- 1/2 cup sun-dried tomatoes + 1 tablespoon oil from the jar
- 1 tablespoon finely chopped fresh basil
- 2 teaspoons chicken bouillon powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon crushed red pepper (more if you want it to be spicy!)
- 3/4 box of thin linguini or other long noodle of your choice (If using short noodles, use about 3 cups of dry noodles)
- Reserved pasta water
Chop the sun-dried tomatoes finely for the paste to enhance the dish’s flavor.
Directions
-
Prepare Sun-Dried Tomato Paste: Measure out the 1/2 cup of sun-dried tomatoes. Chop them as finely as possible, then add to a blender with the 1 tablespoon of oil from the jar. Pulse a few times, scraping the sides of the container between pulses, until it reaches a coarse paste.
-
Cook the Noodles: Bring salted water to a boil and cook the noodles according to package instructions. Carefully reserve about 1/4 cup of the pasta water to thin out the sauce if needed. Once noodles are cooked, strain and set aside.
-
Make the Sauce: While the pasta is cooking, melt butter in a large non-stick pan over medium heat. Add grated garlic, crushed red pepper flakes, dried thyme, and chicken bouillon powder. Cook for 1 minute, stirring frequently.
-
Heat Cream: Pour in the light cream and allow to heat for 5 minutes, stirring occasionally. Keep the heat medium to medium-low to maintain a gentle simmer without boiling.
-
Combine Ingredients: Stir in fresh grated Parmesan cheese, sun-dried tomato paste, salt, pepper, garlic powder, and fresh basil. Mix well and simmer for an additional 5-7 minutes. If the sauce is too thick, use the reserved pasta water to achieve your desired consistency. Skim off any excess oil that appears on the surface if desired.
-
Toss with Noodles: Add the cooked noodles into the sauce and stir until they are nicely coated. Turn off the heat, and serve warm, garnished with additional Parmesan cheese.
Tips & Variations
-
Ingredient Substitutions: You can substitute chicken bouillon powder with vegetable bouillon for a vegetarian option. Try using heavy cream for a richer sauce or a non-dairy cream for a vegan version.
-
Optional Variations: Add sautéed shrimp, grilled chicken, or roasted vegetables if you want to add protein or extra veggies to make the dish more substantial.
-
Storage and Reheating: Store any leftovers in an airtight container in the fridge for up to three days. Reheat gently in a saucepan over low heat, adding a splash of reserved pasta water to loosen the sauce.
